Ingredients

  • 2 tbsp rosemary
  • 2 kg pork roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp thyme
  • 1 tsp black pepper
  • 8 cloves garlic

Instructions

  1. Step 1: Preheat oven to 220°C (425°F)
  2. Step 2: In a small bowl, mix together garlic, rosemary, thyme, salt, and pepper
  3. Step 3: Rub the mixture all over the pork roast, making sure to coat evenly
  4. Step 4: Heat the olive oil in a large oven-safe skillet over medium-high heat
  5. Step 5: Sear the pork roast until browned on all sides, about 5 minutes per side
  6. Step 6: Transfer the skillet to the preheated oven and roast for 20 minutes per kilogram, or until the internal temperature reaches 70°C (160°F)
  7. Step 7: Let the pork roast rest for 10 minutes before slicing and serving
