Description
Tender roast beef infused with aromatic garlic and herbs
Ingredients
- 3.5 lbs beef prime rib roast
- 8 cloves garlic
- 2 tbsp thyme
- 1 tsp rosemary
- 1 tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
Instructions
- Step 1: Preheat oven to 325°F (160°C)
- Step 2: In a small bowl, mix together garlic, thyme, rosemary, salt, and pepper
- Step 3: Rub the mixture all over the beef roast, making sure to coat evenly
- Step 4: Heat the olive oil in a large oven-safe skillet over medium-high heat
- Step 5: Sear the beef roast for 2-3 minutes on each side, or until browned
- Step 6: Transfer the skillet to the preheated oven and roast for 20 minutes per pound, or until the internal temperature reaches 135°F (57°C) for medium-rare
- Step 7: Remove from the oven and let rest for 15 minutes before slicing
