Ingredients

  • 6 cloves garlic
  • 2 tablespoons unsalted butter
  • Salt and pepper
  • 0.5 cup beef broth
  • 2 cups beef stock
  • 3 large potatoes
  • 0.25 cup milk
  • 1 teaspoon thyme
  • 2 tablespoons all-purpose flour

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Toss chopped garlic with 1 tablespoon of butter and roast in the oven for 15-20 minutes, or until tender.
  3. Step 3: Boil chopped potatoes in salted water until tender, about 15-20 minutes.
  4. Step 4: Drain potatoes and mash with 1/4 cup milk, 1 tablespoon butter, and roasted garlic.
  5. Step 5: In a small saucepan, whisk together beef broth and flour. Bring to a boil and cook for 1-2 minutes, or until thickened.
  6. Step 6: Add beef stock, thyme, salt, and pepper to the saucepan. Simmer for 5-7 minutes, or until gravy has thickened to desired consistency.
