Description
A twist on classic spaghetti, using roasted spaghetti squash and topped with garlic parmesan sauce
Ingredients
- 3 cloves garlic
- 0.5 cup parmesan cheese
- Salt and pepper
- 0.25 cup olive oil
- 1 tsp basil
- 1 large spaghetti squash
- 1 tsp dried oregano
Instructions
- Step 1: Preheat oven to 400°F (200°C). Cut spaghetti squash in half lengthwise and scoop out seeds.
- Step 2: Place squash on a baking sheet, cut side up, and drizzle with 2 tbsp olive oil. Season with salt and pepper.
- Step 3: Roast squash in the oven for 30-40 minutes, or until tender and easily shredded with a fork.
- Step 4: While squash is roasting, heat remaining 2 tbsp olive oil in a saucepan over medium heat.
- Step 5: Add minced garlic and cook for 1-2 minutes, until fragrant.
- Step 6: Stir in parmesan cheese, dried basil, and dried oregano. Cook for an additional 1-2 minutes, until cheese is melted and smooth.
- Step 7: Once squash is done roasting, use a fork to shred into spaghetti-like strands.
- Step 8: Toss shredded squash with garlic parmesan sauce and season with salt and pepper to taste.
