Description
Moist chocolate cake filled with coconut pecan frosting
Ingredients
- 0.5 cups sugar
- 2 large eggs
- 1 cup milk
- 2 teaspoons baking powder
- 1 cup semisweet chocolate chips
- 1 teaspoon salt
- 1 cup sweetened shredded coconut
- 0.5 cups flour
- 1 cup butter
- 1 cup pecans
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 0.5 cup unsweetened cocoa powder
Instructions
- Step 1: Preheat oven to 350°F (180°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
- Step 2: In a medium bowl, whisk together flour, sugar, baking powder, and salt.
- Step 3: In a large mixing bowl, combine cocoa powder and milk. Stir until smooth.
- Step 4: Add eggs one at a time, whisking well after each addition. Whisk in vanilla extract.
- Step 5: Gradually add dry ingredients to chocolate mixture, whisking until just combined.
- Step 6: Melt butter and chocolate chips in a double boiler or in the microwave in 30-second increments, stirring between each interval.
- Step 7: Pour batter into prepared pans and smooth tops.
- Step 8: Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Step 9: Allow cakes to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Step 10: To make frosting, combine coconut, pecans, and sweetened condensed milk in a medium bowl. Stir until well combined.
- Step 11: Once cakes are completely cool, place one layer on a serving plate and spread frosting on top. Place second layer on top and frost entire cake with remaining frosting.
