Ingredients
- 2 teaspoons active dry yeast
- 4 ounces parmesan cheese
- 1 large onion
- 8 ounces gorgonzola cheese
- 2 cloves garlic
- 4 ounces ricotta cheese
- 2 tablespoons olive oil
- 8 ounces mozzarella cheese
- 1.5 cups flour
- 0.5 cups water
- 1 teaspoon salt

Instructions
- Step 1: Preheat oven to 425°F (220°C) with a baking stone inside.
- Step 2: In a large bowl, combine warm water and yeast. Let it sit for 5-7 minutes until yeast is activated.
- Step 3: Add flour, salt, and olive oil to the bowl. Mix until a dough forms.
- Step 4: Knead the dough for 5-7 minutes until it becomes smooth and elastic.
- Step 5: Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise in a warm place for 1 hour, or until it has doubled in size.
- Step 6: Roll out the dough to a thickness of 1/4 inch (6 mm) and transfer it to a piece of parchment paper.
- Step 7: Caramelize the onions by cooking them in a pan with a little bit of oil over low heat for 30-40 minutes, stirring occasionally.
- Step 8: Spread the caramelized onions over the dough, leaving a 1/2 inch (1 cm) border around the edges.
- Step 9: Top the onions with garlic, gorgonzola cheese, mozzarella cheese, parmesan cheese, and ricotta cheese.
- Step 10: Sprinkle chopped thyme leaves over the top.
- Step 11: Slide the parchment paper onto the preheated baking stone and bake for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
