Description
A large, filling breakfast burrito packed with scrambled eggs, chorizo, and cheese, wrapped in a toasted flour tortilla
Ingredients
- 1 teaspoon smoked paprika
- 1 cup Monterey Jack cheese
- 0.5 cup black beans
- 2 cloves garlic
- 1 tablespoon olive oil
- Salt and pepper
- 8 large eggs
- 0.5 cup onion
- 0.5 cup bell pepper
- 4 large flour tortillas
- 2 teaspoons cumin
- 0.5 pound Mexican chorizo
Instructions
- Step 1: In a large bowl, whisk together eggs, cumin, smoked paprika, salt, and pepper
- Step 2: Heat the olive oil in a large skillet over medium-high heat
- Step 3: Add the chorizo to the skillet, breaking it up with a spoon as it cooks, until browned, about 5 minutes
- Step 4: Add the diced onion and bell pepper to the skillet and cook until the vegetables are softened, about 5 minutes
- Step 5: Add the garlic to the skillet and cook for 1 minute
- Step 6: Pour the whisked eggs over the chorizo mixture in the skillet and scramble the eggs until they are cooked through
- Step 7: Stir in the black beans and cook for 1 minute
- Step 8: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
