Description

Ingredients

  • 1 teaspoon smoked paprika
  • 1 cup Monterey Jack cheese
  • 0.5 cup black beans
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • Salt and pepper
  • 8 large eggs
  • 0.5 cup onion
  • 0.5 cup bell pepper
  • 4 large flour tortillas
  • 2 teaspoons cumin
  • 0.5 pound Mexican chorizo

Instructions

  1. Step 1: In a large bowl, whisk together eggs, cumin, smoked paprika, salt, and pepper
  2. Step 2: Heat the olive oil in a large skillet over medium-high heat
  3. Step 3: Add the chorizo to the skillet, breaking it up with a spoon as it cooks, until browned, about 5 minutes
  4. Step 4: Add the diced onion and bell pepper to the skillet and cook until the vegetables are softened, about 5 minutes
