Description
A refreshing salad featuring cucumbers, tomatoes, and feta cheese, dressed with a zesty Greek vinaigrette
Ingredients
- 1 12 cup crumbled feta cheese
- 0.25 cup olive oil
- 2 tablespoons red wine vinegar
- 4 large cucumbers
- 1 teaspoon oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 large tomatoes
Instructions
- Step 1: In a large bowl, combine the sliced cucumbers and diced tomatoes
- Step 2: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper
- Step 3: Pour the dressing over the cucumber and tomato mixture, and toss to coat
- Step 4: Sprinkle the crumbled feta cheese over the top of the salad, and toss gently to combine
- Step 5: Cover the bowl with plastic wrap, and refrigerate for at least 30 minutes to allow the flavors to meld
