Ingredients

  • 0.5 pound Mexican chorizo
  • 0.25 cup cilantro

  • 6 large flour tortillas

  • 0.5 cup Monterey Jack cheese
  • 0.5 cup Mexican rice
  • 0.5 cup green chile
  • 6 large eggs

Instructions

  1. Step 1: Heat the olive oil in a large skillet over medium-high heat. Add the chorizo and cook, breaking it up with a spoon, until browned, about 5 minutes.
  2. Step 2: Add the chopped green chile to the skillet and cook for 1 minute.
  3. Step 3: In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the chorizo mixture in the skillet and scramble until the eggs are cooked through.
