Ingredients
- 0.5 pound Mexican chorizo
- 0.25 cup cilantro
- Salt and pepper
- 6 large flour tortillas
- 1 tablespoon olive oil
- 0.5 cup Monterey Jack cheese
- 0.5 cup Mexican rice
- 0.5 cup green chile
- 6 large eggs
Instructions
- Step 1: Heat the olive oil in a large skillet over medium-high heat. Add the chorizo and cook, breaking it up with a spoon, until browned, about 5 minutes.
- Step 2: Add the chopped green chile to the skillet and cook for 1 minute.
- Step 3: In a large bowl, whisk together the eggs and a pinch of salt. Pour the eggs over the chorizo mixture in the skillet and scramble until the eggs are cooked through.
- Step 4: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 5: Assemble the burritos by spooning the egg mixture onto a tortilla, followed by a spoonful of Mexican rice, some shredded cheese, and a sprinkle of cilantro.
- Step 6: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly. Repeat with the remaining ingredients.
