Description

Tender grilled steak, melted cheese, and crunchy vegetables wrapped in a warm flour tortilla

Ingredients

  • 0.5 cup red onion
  • 1 tsp cumin
  • 1 cup Monterey Jack cheese
  • 1 cup cheddar cheese
  • 4 large flour tortillas
  • 0.25 cup cilantro
  • Salt and pepper
  • 1.5 lbs flank steak
  • 0.5 cup bell peppers
  • 1 tsp smoked paprika
  • 2 tbsp lime juice
  • 2 tbsp olive oil

Instructions

  1. Step 1: Preheat grill to medium-high heat
  2. Step 2: In a small bowl, whisk together olive oil, lime juice, cumin, smoked paprika, salt, and pepper
  3. Step 3: Brush the mixture on both sides of the steak and grill for 5-6 minutes per side or until cooked to desired doneness
  4. Step 4: Transfer the steak to a cutting board and let rest for 5 minutes before slicing
  5. Step 5: Meanwhile, grill the tortillas for 30 seconds on each side
  6. Step 6: Assemble the wraps by spreading cheese on each tortilla, then adding sliced steak, onion, bell peppers, and cilantro
  7. Step 7: Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly
