Description
Tender grilled steak, melted cheese, and crunchy vegetables wrapped in a warm flour tortilla
Ingredients
- 0.5 cup red onion
- 1 tsp cumin
- 1 cup Monterey Jack cheese
- 1 cup cheddar cheese
- 4 large flour tortillas
- 0.25 cup cilantro
- Salt and pepper
- 1.5 lbs flank steak
- 0.5 cup bell peppers
- 1 tsp smoked paprika
- 2 tbsp lime juice
- 2 tbsp olive oil
Instructions
- Step 1: Preheat grill to medium-high heat
- Step 2: In a small bowl, whisk together olive oil, lime juice, cumin, smoked paprika, salt, and pepper
- Step 3: Brush the mixture on both sides of the steak and grill for 5-6 minutes per side or until cooked to desired doneness
- Step 4: Transfer the steak to a cutting board and let rest for 5 minutes before slicing
- Step 5: Meanwhile, grill the tortillas for 30 seconds on each side
- Step 6: Assemble the wraps by spreading cheese on each tortilla, then adding sliced steak, onion, bell peppers, and cilantro
- Step 7: Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly
