Ingredients

  • 0.25 tsp Cayenne Pepper
  • 0.25 cup Lime Juice
  • 1 large Onion
  • 2 large Bell Peppers
  • 1.5 lbs Flank Steak
  • 1 cup Monterey Jack Cheese
  • Cilantro
  • 8 small Flour Tortillas
  • 2 tbsp Olive Oil
  • 1 tsp Ground Cumin
  • 2 cloves Garlic
  • 1 tsp Dried Oregano
  • Salt and Pepper
  • 0.5 tsp Chili Powder

Instructions

  1. Step 1: In a large resealable plastic bag, combine lime juice, olive oil, garlic, oregano, cumin, chili powder, and cayenne pepper.
  2. Step 2: Add the flank steak, turning to coat evenly. Seal and refrigerate for at least 2 hours or overnight.
  3. Step 3: Preheat grill to medium-high heat. Remove the steak from the marinade and cook for 5-7 minutes per side or until it reaches desired doneness.
  4. Step 4: Transfer the steak to a cutting board and let rest for 5 minutes before slicing into thin strips.
  5. Step 5: Meanwhile, grill the bell peppers and onion slices for 5 minutes per side or until tender and slightly charred.
  6. Step 6: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
