Ingredients
- 0.25 tsp Cayenne Pepper
- 0.25 cup Lime Juice
- 1 large Onion
- 2 large Bell Peppers
- 1.5 lbs Flank Steak
- 1 cup Monterey Jack Cheese
- Cilantro
- 8 small Flour Tortillas
- 2 tbsp Olive Oil
- 1 tsp Ground Cumin
- 2 cloves Garlic
- 1 tsp Dried Oregano
- Salt and Pepper
- 0.5 tsp Chili Powder
Instructions
- Step 1: In a large resealable plastic bag, combine lime juice, olive oil, garlic, oregano, cumin, chili powder, and cayenne pepper.
- Step 2: Add the flank steak, turning to coat evenly. Seal and refrigerate for at least 2 hours or overnight.
- Step 3: Preheat grill to medium-high heat. Remove the steak from the marinade and cook for 5-7 minutes per side or until it reaches desired doneness.
- Step 4: Transfer the steak to a cutting board and let rest for 5 minutes before slicing into thin strips.
- Step 5: Meanwhile, grill the bell peppers and onion slices for 5 minutes per side or until tender and slightly charred.
- Step 6: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 7: Assemble the fajitas by placing a portion of the steak and peppers onto a tortilla and topping with cheese and cilantro.
