Ingredients

  • 1 eggplant
  • 1 large zucchini
  • 1 red bell pepper
  • 2 cloves garlic
  • 0.25 cup pesto
  • 8 ounces mozzarella cheese
  • 4 rolls Ciabatta bread
  • Salt and pepper
  • 2 tablespoons olive oil

Instructions

  1. Step 1: Preheat grill to medium-high heat.
