Description

A classic French onion soup with a rich, flavorful broth and melted Gruyère cheese

Ingredients

  • 2 cups Gruyère cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 cup dry white wine
  • 0.5 teaspoon black pepper
  • 4 cloves garlic
  • 4 slices baguette
  • 4 onions
  • 6 cups beef broth

Instructions

  1. Step 1: Melt butter in a large saucepan over medium heat
  2. Step 2: Add sliced onions and cook, stirring occasionally, until they are softened and caramelized, about 20-25 minutes
  3. Step 3: Add salt, pepper, and garlic; cook for 1 minute
  4. Step 4: Add white wine and cook until the liquid is almost completely evaporated, stirring to scrape up browned bits from the bottom of the pan
  5. Step 5: Add beef broth and bring to a boil, then reduce the heat to low and simmer for 10-15 minutes
  6. Step 6: Preheat broiler
  7. Step 7: To assemble the soup, place toasted baguette slices in the bottom of oven-proof bowls
  8. Step 8: Ladle the hot soup over the bread, then top with grated Gruyère cheese
  9. Step 9: Place the bowls under the broiler and cook until the cheese is melted and bubbly, about 2-3 minutes
