Description
A classic French onion soup with a rich, flavorful broth and melted Gruyère cheese
Ingredients
- 2 cups Gruyère cheese
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- 1 cup dry white wine
- 0.5 teaspoon black pepper
- 4 cloves garlic
- 4 slices baguette
- 4 onions
- 6 cups beef broth
Instructions
- Step 1: Melt butter in a large saucepan over medium heat
- Step 2: Add sliced onions and cook, stirring occasionally, until they are softened and caramelized, about 20-25 minutes
- Step 3: Add salt, pepper, and garlic; cook for 1 minute
- Step 4: Add white wine and cook until the liquid is almost completely evaporated, stirring to scrape up browned bits from the bottom of the pan
- Step 5: Add beef broth and bring to a boil, then reduce the heat to low and simmer for 10-15 minutes
- Step 6: Preheat broiler
- Step 7: To assemble the soup, place toasted baguette slices in the bottom of oven-proof bowls
- Step 8: Ladle the hot soup over the bread, then top with grated Gruyère cheese
- Step 9: Place the bowls under the broiler and cook until the cheese is melted and bubbly, about 2-3 minutes
