Ingredients

  • 1 tsp oregano
  • 2 cups okra
  • 2 medium onions
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 3 stalks celery
  • 1 cup water
  • 1 lb shrimp
  • 1 tsp thyme
  • 2 tbsp filé powder
  • 0.25 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 0.5 tsp salt
  • 1 lb chicken thighs
  • 1 lb andouille sausage
  • 3 cloves garlic
  • 2 cups long-grain rice

Instructions

  1. Step 1: Heat oil in a large cast-iron pot over medium-high heat.
  2. Step 2: Add sausage and cook, stirring occasionally, until browned, about 5 minutes.
  3. Step 3: Add chicken and cook, stirring occasionally, until browned, about 5 minutes.
  4. Step 4: Add onions, celery, and garlic and cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  5. Step 5: Add diced tomatoes, rice, broth, water, thyme, oregano, cayenne, paprika, salt, and pepper. Stir to combine.
  6. Step 6: Bring to a boil, then reduce heat to low and simmer, covered, for 25 minutes.
  7. Step 7: Stir in filé powder and cook for 1 minute.
  8. Step 8: Add okra and cook, stirring occasionally, until okra is tender, about 10 minutes.
  9. Step 9: Add shrimp and cook, stirring occasionally, until pink and cooked through, about 5 minutes.
