Description
A hearty, flavorful stew originating from Louisiana, made with a combination of ingredients like okra, rice, and a variety of meats and seafood.
Ingredients
- 1 tsp oregano
- 2 cups okra
- 2 medium onions
- 2 cups chicken broth
- 1 cup diced tomatoes
- 3 stalks celery
- 1 cup water
- 1 lb shrimp
- 1 tsp thyme
- 2 tbsp filé powder
- 0.25 tsp black pepper
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp cayenne pepper
- 0.5 tsp salt
- 1 lb chicken thighs
- 1 lb andouille sausage
- 3 cloves garlic
- 2 cups long-grain rice
Instructions
- Step 1: Heat oil in a large cast-iron pot over medium-high heat.
- Step 2: Add sausage and cook, stirring occasionally, until browned, about 5 minutes.
- Step 3: Add chicken and cook, stirring occasionally, until browned, about 5 minutes.
- Step 4: Add onions, celery, and garlic and cook, stirring occasionally, until vegetables are softened, about 5 minutes.
- Step 5: Add diced tomatoes, rice, broth, water, thyme, oregano, cayenne, paprika, salt, and pepper. Stir to combine.
- Step 6: Bring to a boil, then reduce heat to low and simmer, covered, for 25 minutes.
- Step 7: Stir in filé powder and cook for 1 minute.
- Step 8: Add okra and cook, stirring occasionally, until okra is tender, about 10 minutes.
- Step 9: Add shrimp and cook, stirring occasionally, until pink and cooked through, about 5 minutes.
