Description
A classic comfort food dish featuring a glazed ham, roasted vegetables, and creamy mashed potatoes.
Ingredients
- 2 tablespoons Dijon mustard
- 4 medium-sized red potatoes
- 2 tablespoons olive oil
- 0.5 cup heavy cream
- 1 pound bone-in ham
- 4 medium-sized carrots
- 0.5 cup chicken broth
- Salt and pepper
- 2 tablespoons butter
- 2 tablespoons honey
- 0.25 cup brown sugar
- 4 medium-sized Brussels sprouts
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: In a small bowl, mix together the brown sugar, Dijon mustard, and honey until well combined.
- Step 3: Place the ham on a rimmed baking sheet or a roasting pan, fat side up. Score the fat in a diamond pattern, cutting about 1/4 inch deep.
- Step 4: Brush the glaze all over the ham, making sure to get some of the glaze into the scored lines.
- Step 5: Roast the ham in the preheated oven for 20 minutes per pound, or until the internal temperature reaches 140°F (60°C).
- Step 6: While the ham is cooking, toss the chopped carrots and Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes, or until tender and lightly browned.
- Step 7: Boil the chopped potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add the chicken broth, butter, and heavy cream, and mash the potatoes with a potato masher or a fork until smooth and creamy.
- Step 8: Remove the ham from the oven and let it rest for 10-15 minutes before slicing and serving with the roasted vegetables and mashed potatoes.
