Description

Ingredients

  • 2 tablespoons Dijon mustard
  • 4 medium-sized red potatoes
  • 2 tablespoons olive oil
  • 0.5 cup heavy cream
  • 1 pound bone-in ham
  • 4 medium-sized carrots
  • 0.5 cup chicken broth
  • Salt and pepper
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 0.25 cup brown sugar
  • 4 medium-sized Brussels sprouts

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: In a small bowl, mix together the brown sugar, Dijon mustard, and honey until well combined.
  3. Step 3: Place the ham on a rimmed baking sheet or a roasting pan, fat side up. Score the fat in a diamond pattern, cutting about 1/4 inch deep.
  4. Step 4: Brush the glaze all over the ham, making sure to get some of the glaze into the scored lines.
  5. Step 5: Roast the ham in the preheated oven for 20 minutes per pound, or until the internal temperature reaches 140°F (60°C).
  6. Step 6: While the ham is cooking, toss the chopped carrots and Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes, or until tender and lightly browned.
  7. Step 7: Boil the chopped potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add the chicken broth, butter, and heavy cream, and mash the potatoes with a potato masher or a fork until smooth and creamy.
  8. Step 8: Remove the ham from the oven and let it rest for 10-15 minutes before slicing and serving with the roasted vegetables and mashed potatoes.
