Description

Crispy shredded potato patties, perfect as a side dish or breakfast accompaniment

Ingredients

  • 2 large eggs
  • 0.25 teaspoon black pepper
  • 0.25 cup cheddar cheese
  • 0.5 teaspoon salt
  • 2 cloves garlic
  • 1 large onion
  • 0.5 cup all-purpose flour
  • 0.25 teaspoon paprika
  • 2 large potatoes

Instructions

  1. Step 1: Grate the potatoes and onion using the large holes of a box grater.
  2. Step 2: In a large bowl, combine grated potatoes, onion, garlic, flour, salt, pepper, and paprika. Mix well.
  3. Step 3: Squeeze out as much moisture from the potato mixture as possible using a cheesecloth or a clean kitchen towel.
  4. Step 4: Add the eggs to the potato mixture and mix until just combined.
  5. Step 5: Using your hands, shape the mixture into 4-6 patties, depending on desired size.
  6. Step 6: Heat a non-stick skillet with about 1/2 inch (1 cm) of oil over medium heat.
  7. Step 7: When the oil is hot, add the patties and cook for 4-5 minutes on each side, until golden brown and crispy.
  8. Step 8: Remove the patties from the oil and drain on paper towels.
