Description
Crispy shredded potato patties, perfect as a side dish or breakfast accompaniment
Ingredients
- 2 large eggs
- 0.25 teaspoon black pepper
- 0.25 cup cheddar cheese
- 0.5 teaspoon salt
- 2 cloves garlic
- 1 large onion
- 0.5 cup all-purpose flour
- 0.25 teaspoon paprika
- 2 large potatoes
Instructions
- Step 1: Grate the potatoes and onion using the large holes of a box grater.
- Step 2: In a large bowl, combine grated potatoes, onion, garlic, flour, salt, pepper, and paprika. Mix well.
- Step 3: Squeeze out as much moisture from the potato mixture as possible using a cheesecloth or a clean kitchen towel.
- Step 4: Add the eggs to the potato mixture and mix until just combined.
- Step 5: Using your hands, shape the mixture into 4-6 patties, depending on desired size.
- Step 6: Heat a non-stick skillet with about 1/2 inch (1 cm) of oil over medium heat.
- Step 7: When the oil is hot, add the patties and cook for 4-5 minutes on each side, until golden brown and crispy.
- Step 8: Remove the patties from the oil and drain on paper towels.
