Description
A rich and flavorful stew made with tender beef, fresh vegetables, and aromatic spices.
Ingredients
- 1 teaspoon rosemary
- 0.5 teaspoon black pepper
- 2 lbs beef stew meat
- 1 bay leaf
- 2 medium onions
- 2 medium potatoes
- 1 teaspoon thyme
- 2 medium carrots
- 1 teaspoon salt
- 1 can diced tomatoes
- 2 cups beef broth
- 1 cup red bell pepper
- 3 cloves garlic
Instructions
- Step 1: Heat oil in a large Dutch oven over medium-high heat.
- Step 2: Add beef and cook until browned on all sides, about 5 minutes. Remove from pot and set aside.
- Step 3: Add onions to pot and cook until they start to brown, about 5 minutes.
- Step 4: Add garlic and cook for 1 minute.
- Step 5: Add carrots, potatoes, and bell pepper. Cook for 5 minutes, stirring occasionally.
- Step 6: Add diced tomatoes, beef broth, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
- Step 7: Return beef to pot and bring to a boil.
- Step 8: Reduce heat to low and simmer, covered, for 2 1/2 hours or until beef is tender.
- Step 9: Remove bay leaf and serve hot.
