Ingredients

  • 1 teaspoon rosemary
  • 0.5 teaspoon black pepper
  • 2 lbs beef stew meat
  • 1 bay leaf
  • 2 medium onions
  • 2 medium potatoes
  • 1 teaspoon thyme
  • 2 medium carrots
  • 1 teaspoon salt
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 cup red bell pepper
  • 3 cloves garlic

Instructions

  1. Step 1: Heat oil in a large Dutch oven over medium-high heat.
  2. Step 2: Add beef and cook until browned on all sides, about 5 minutes. Remove from pot and set aside.
  3. Step 3: Add onions to pot and cook until they start to brown, about 5 minutes.
  4. Step 4: Add garlic and cook for 1 minute.
  5. Step 5: Add carrots, potatoes, and bell pepper. Cook for 5 minutes, stirring occasionally.
  6. Step 6: Add diced tomatoes, beef broth, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine.
  7. Step 7: Return beef to pot and bring to a boil.
  8. Step 8: Reduce heat to low and simmer, covered, for 2 1/2 hours or until beef is tender.
  9. Step 9: Remove bay leaf and serve hot.
