Homemade Ravioli with Ricotta Filling

Description
Tender ravioli filled with a creamy ricotta mixture, served with a light and tangy tomato sauce
Ingredients
- 1 teaspoon salt
- 0.25 cup parsley
- 1 cup ricotta cheese
- 2 cups all-purpose flour
- 2 tablespoons olive oil
- 1 cup crushed tomatoes
- 2 cloves garlic
- 0.5 cup Parmesan cheese
- 2 eggs
Instructions
- Step 1: Combine flour, eggs, and salt to make the pasta dough. Knead for 10 minutes and let rest for 30 minutes.
- Step 2: In a bowl, mix together ricotta cheese, Parmesan cheese, parsley, and garlic.
- Step 3: Roll out the pasta dough to a thin sheet. Use a round cookie cutter to cut out circles of dough.
- Step 4: Place a tablespoon of the ricotta mixture in the center of each dough circle. Fold the dough over to form a triangle and press edges together to seal.
- Step 5: Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes, or until they float to the surface.
- Step 6: In a saucepan, heat the olive oil over medium heat. Add the crushed tomatoes and cook for 10-15 minutes, stirring occasionally.
- Step 7: Serve the ravioli with the tomato sauce and grated Parmesan cheese.
