Description
A twist on the classic Hot Brown, served as a breakfast sandwich
Ingredients
- 4 slices brioche
- 4 slices cheddar cheese
- 2 cups spinach
- 4 large eggs
- 4 slices bacon
- 4 tablespoons unsalted butter
- 1 cup Mornay sauce
Instructions
- Step 1: Preheat the broiler to high heat
- Step 2: Cook the bacon slices in a skillet until crispy, then set aside
- Step 3: Butter the toasted brioche slices on the outside
- Step 4: In a separate skillet, melt 2 tablespoons of butter over medium heat and fry the eggs sunny-side up
- Step 5: Assemble the sandwiches by placing a slice of cheese, a few spinach leaves, a slice of bacon, and a fried egg on each brioche slice
- Step 6: Spoon the Mornay sauce over the top of each sandwich
- Step 7: Place the sandwiches under the broiler for 2-3 minutes, until the cheese is melted and bubbly
