Description

A twist on the classic Hot Brown, served as a breakfast sandwich

Ingredients

  • 4 slices brioche
  • 4 slices cheddar cheese
  • 2 cups spinach
  • 4 large eggs
  • 4 slices bacon
  • 4 tablespoons unsalted butter
  • 1 cup Mornay sauce

Instructions

  1. Step 1: Preheat the broiler to high heat
  2. Step 2: Cook the bacon slices in a skillet until crispy, then set aside
  3. Step 3: Butter the toasted brioche slices on the outside
  4. Step 4: In a separate skillet, melt 2 tablespoons of butter over medium heat and fry the eggs sunny-side up
  5. Step 5: Assemble the sandwiches by placing a slice of cheese, a few spinach leaves, a slice of bacon, and a fried egg on each brioche slice
  6. Step 6: Spoon the Mornay sauce over the top of each sandwich
  7. Step 7: Place the sandwiches under the broiler for 2-3 minutes, until the cheese is melted and bubbly
