Description
A breakfast twist on traditional nachos, featuring tortilla chips smothered in a spicy tomato sauce, melted cheese, and fried eggs
Ingredients
- 0.5 cup onion
- 0.25 cup cilantro
- 1 can diced tomatoes
- 1 teaspoon smoked paprika
- 1 pepper jalapeño
- 0.25 cup queso fresco
- Sour cream and salsa
- 4 large eggs
- 1 bag tortilla chips
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup Monterey Jack cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a large saucepan, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Step 3: Add the diced jalapeño, cumin, smoked paprika, salt, and pepper to the saucepan and cook for 1 minute.
- Step 4: Stir in the diced tomatoes and bring the mixture to a simmer. Reduce heat to low and let sauce simmer while you prepare the nachos.
- Step 5: Arrange the tortilla chips in a single layer on a large baking sheet.
- Step 6: Pour the tomato sauce over the tortilla chips, making sure they are all coated.
- Step 7: Sprinkle the shredded cheese over the top of the nachos.
- Step 8: Transfer the baking sheet to the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Step 9: While the nachos are baking, fry the eggs in a non-stick skillet over medium heat. Cook until the whites are set and the yolks are cooked to your desired doneness.
- Step 10: Remove the nachos from the oven and top with the fried eggs.
- Step 11: Serve immediately, garnished with crumbled queso fresco, sour cream, and salsa if desired.
