Ingredients

  • 0.5 cup onion
  • 0.25 cup cilantro
  • 1 can diced tomatoes
  • 1 teaspoon smoked paprika
  • 1 pepper jalapeño
  • 0.25 cup queso fresco
  • Sour cream and salsa
  • 4 large eggs
  • 1 bag tortilla chips
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup Monterey Jack cheese

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large saucepan, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Step 3: Add the diced jalapeño, cumin, smoked paprika, salt, and pepper to the saucepan and cook for 1 minute.
  4. Step 4: Stir in the diced tomatoes and bring the mixture to a simmer. Reduce heat to low and let sauce simmer while you prepare the nachos.
  5. Step 5: Arrange the tortilla chips in a single layer on a large baking sheet.
