Ingredients
- 2 cloves garlic
- 1 tablespoon lemon juice
- 0.25 cup cilantro
- 0.25 cup olive oil
- 0.25 cup parsley
- 1 large bell pepper
- 1 cup hummus
- 0.25 teaspoon cayenne pepper
- 0.5 teaspoon cumin
- 0.5 teaspoon paprika
- 0.5 cups chickpeas
- 1 large tomato
- 4 large flour tortillas
- 1 cup lettuce
- 0.25 teaspoon black pepper
- 1 large cucumber
- 0.5 teaspoon salt
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: In a food processor, combine chickpeas, garlic, parsley, cilantro, lemon juice, cumin, paprika, cayenne pepper, salt, and black pepper. Process until coarsely chopped.
- Step 3: Using wet hands, shape mixture into 8-10 patties.
- Step 4: Place patties on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 20-25 minutes, flipping halfway.
- Step 5: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Spread 1/4 cup hummus on each tortilla, leaving a 1-inch border around the edges.
- Step 7: Arrange 2-3 falafel patties on each tortilla, followed by sliced cucumber, bell pepper, tomato, and shredded lettuce.
- Step 8: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the wrap into a tight cylinder.
