Ingredients

  • 0.25 cup tahini
  • 3 tablespoons olive oil
  • 2 cups mixed greens
  • 0.5 cup chickpeas
  • 1 red bell pepper
  • 0.5 teaspoon salt
  • 1 large carrot
  • 2 cloves garlic
  • 1 large cucumber
  • 0.25 cup lemon juice
  • 1 large flour tortilla

Instructions

  1. Step 1: In a blender or food processor, combine chickpeas, lemon juice, tahini, garlic, and salt. Blend until smooth.
  2. Step 2: With the blender or food processor running, slowly pour in olive oil. Continue blending until creamy.
  3. Step 3: Spread the hummus on the tortilla, leaving a 1-inch border around the edges.
  4. Step 4: Arrange cucumber, carrot, and bell pepper slices on top of the hummus.
  5. Step 5: Add mixed greens on top of the vegetables.
  6. Step 6: Fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll the wrap up tightly.
