Irish Corned Beef and Cabbage

Description
A traditional Irish dish made with tender corned beef, boiled cabbage, and potatoes.
Ingredients
- 1 pound corned beef brisket
- 2 cloves garlic
- 1 teaspoon thyme
- 1 tablespoon brown sugar
- 1 teaspoon mustard seeds
- 4 medium-sized potatoes
- 1 cup beef broth
- 1 head cabbage
- Salt and pepper
- 1 large onion
Instructions
- Step 1: Place the corned beef in a large pot or Dutch oven and add enough cold water to cover it.
- Step 2: Bring to a boil over high heat, then reduce the heat to low and simmer for 3-4 hours, or until the corned beef is tender.
- Step 3: About 45 minutes before serving, add the sliced onion, minced garlic, beef broth, brown sugar, mustard seeds, and thyme to the pot.
- Step 4: Add the cabbage wedges to the pot and continue to simmer for another 30-40 minutes, or until the cabbage is tender.
- Step 5: Add the halved potatoes to the pot and continue to simmer for another 15-20 minutes, or until the potatoes are tender.
- Step 6: Remove the corned beef from the pot and slice it thinly against the grain.
- Step 7: Serve the sliced corned beef with the boiled cabbage, potatoes, and onions.
