Ingredients

  • 1 teaspoon basil
  • 1 onion
  • 2 medium carrots
  • 2 stalks celery
  • 1 can crushed tomatoes
  • 1 15-ounce can cannellini beans
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 2 tablespoons olive oil
  • 1 can kidney beans
  • 1 cup pasta shapes
  • 3 cloves garlic

Instructions

  1. Step 1: Heat the olive oil in a large pot over medium heat
  2. Step 2: Add the chopped onion and cook until softened, about 5 minutes
  3. Step 3: Add the minced garlic and cook for 1 minute
  4. Step 4: Add the chopped carrots and celery and cook until they begin to soften, about 5 minutes
  5. Step 5: Add the crushed tomatoes, vegetable broth, kidney beans, cannellini beans, basil, oregano, salt, and pepper
  6. Step 6: Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes
