Description
A hearty and flavorful Italian soup made with vegetables, beans, and pasta
Ingredients
- 1 teaspoon basil
- 1 onion
- 2 medium carrots
- 2 stalks celery
- 1 can crushed tomatoes
- 1 15-ounce can cannellini beans
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- Salt and pepper
- 2 tablespoons olive oil
- 1 can kidney beans
- 1 cup pasta shapes
- 3 cloves garlic
Instructions
- Step 1: Heat the olive oil in a large pot over medium heat
- Step 2: Add the chopped onion and cook until softened, about 5 minutes
- Step 3: Add the minced garlic and cook for 1 minute
- Step 4: Add the chopped carrots and celery and cook until they begin to soften, about 5 minutes
- Step 5: Add the crushed tomatoes, vegetable broth, kidney beans, cannellini beans, basil, oregano, salt, and pepper
- Step 6: Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes
- Step 7: Add the small pasta shapes to the pot and cook until they are tender, about 8-10 minutes
- Step 8: Serve the soup hot, garnished with chopped fresh parsley or basil, if desired
