Description
A classic Italian-inspired pasta salad with a medley of vegetables and a tangy dressing
Ingredients
- 1 cup Kalamata olives
- Salt and pepper
- 1 cup mozzarella cheese
- 2 tbsp olive oil
- 0.5 cup red bell pepper
- 2 cups cherry tomatoes
- 0.25 cup parsley
- 1 tsp oregano
- 2 tbsp white wine vinegar
- 1 cup cucumber
- 0.5 cup red onion
- 8 oz bow tie pasta
- 1 cup artichoke hearts
Instructions
- Step 1: Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
- Step 2: In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, olives, artichoke hearts, red onion, and red bell pepper.
- Step 3: In a small bowl, whisk together the olive oil, white wine vinegar, dried oregano, salt, and pepper.
- Step 4: Pour the dressing over the pasta mixture and toss to combine.
