Ingredients

  • 1 cup white rice
  • 1 medium onion
  • 1 cup mozzarella cheese
  • 4 large bell peppers
  • Salt and pepper
  • 3 cloves garlic
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 0.25 cup Parmesan cheese
  • 1 can crushed tomatoes
  • 1 pound ground beef

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cut off the tops of the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  3. Step 3: In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks.
  4. Step 4: Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
  5. Step 5: Stir in the cooked rice, crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper to taste.
  6. Step 6: Stuff each bell pepper with the rice and beef mixture, filling to the top.
  7. Step 7: Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. Step 8: Remove the foil and top each bell pepper with shredded mozzarella cheese and grated Parmesan cheese.
  9. Step 9: Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
