Description
Spicy smoked sausage filled with cheddar cheese and jalapeños
Ingredients
- 1 tsp smoked paprika
- 3 cloves garlic
- 1 large onion
- 1 cup cheddar cheese
- 500 g pork shoulder
- 0.25 tsp cayenne pepper
- 0.25 cup water
- 250 g beef chuck
- 0.5 tsp black pepper
- 1 tsp salt
- 2 large jalapeños
Instructions
- Step 1: In a large bowl, combine pork, beef, onion, garlic, smoked paprika, salt, black pepper, and cayenne pepper. Mix well with your hands until just combined.
- Step 2: Stir in cheddar cheese and chopped jalapeños.
- Step 3: Add ice-cold water and mix until the mixture is sticky and holds together.
- Step 4: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Step 5: Preheat a smoker to 225°F (110°C).
- Step 6: Stuff the mixture into hog casings, if desired, or form into patties.
- Step 7: Smoke the sausages for 2-3 hours, or until they reach an internal temperature of 160°F (71°C).
- Step 8: Let the sausages rest for 10-15 minutes before slicing and serving.
