Description

Spicy smoked sausage filled with cheddar cheese and jalapeños

Ingredients

  • 1 tsp smoked paprika
  • 3 cloves garlic
  • 1 large onion
  • 1 cup cheddar cheese
  • 500 g pork shoulder
  • 0.25 tsp cayenne pepper
  • 0.25 cup water
  • 250 g beef chuck
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 2 large jalapeños

Instructions

  1. Step 1: In a large bowl, combine pork, beef, onion, garlic, smoked paprika, salt, black pepper, and cayenne pepper. Mix well with your hands until just combined.
  2. Step 2: Stir in cheddar cheese and chopped jalapeños.
  3. Step 3: Add ice-cold water and mix until the mixture is sticky and holds together.
  4. Step 4: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  5. Step 5: Preheat a smoker to 225°F (110°C).
  6. Step 6: Stuff the mixture into hog casings, if desired, or form into patties.
  7. Step 7: Smoke the sausages for 2-3 hours, or until they reach an internal temperature of 160°F (71°C).
  8. Step 8: Let the sausages rest for 10-15 minutes before slicing and serving.
