Description

Spicy one-pot dish from Louisiana, made with sausage, chicken, and rice

Ingredients

  • 2 cups long-grain rice
  • 1 large red bell pepper
  • 3 cloves garlic
  • 1 tsp salt
  • 1 lb smoked sausage
  • 1 tsp cayenne pepper
  • 2 medium onions
  • 1 tsp paprika
  • 3 stalks celery
  • 2 tbsp vegetable oil
  • 1 lb chicken thighs
  • 1 tsp thyme
  • 2 cups chicken broth
  • 0.5 tsp black pepper

Instructions

  1. Step 1: Heat oil in a large cast-iron pot or Dutch oven over medium-high heat
  2. Step 2: Add sausage and cook until browned, about 5 minutes
  3. Step 3: Add chicken and cook until browned, about 5 minutes
  4. Step 4: Add onions, celery, and bell pepper and cook until vegetables are tender, about 5 minutes
  5. Step 5: Add garlic, thyme, paprika, cayenne pepper, salt, and black pepper and cook for 1 minute
  6. Step 6: Add rice and cook for 1-2 minutes, stirring constantly
  7. Step 7: Add chicken broth and bring to a boil
  8. Step 8: Reduce heat to low, cover, and simmer for 25-30 minutes or until rice is tender and liquid is absorbed
