Description
Spicy one-pot dish from Louisiana, made with sausage, chicken, and rice
Ingredients
- 2 cups long-grain rice
- 1 large red bell pepper
- 3 cloves garlic
- 1 tsp salt
- 1 lb smoked sausage
- 1 tsp cayenne pepper
- 2 medium onions
- 1 tsp paprika
- 3 stalks celery
- 2 tbsp vegetable oil
- 1 lb chicken thighs
- 1 tsp thyme
- 2 cups chicken broth
- 0.5 tsp black pepper
Instructions
- Step 1: Heat oil in a large cast-iron pot or Dutch oven over medium-high heat
- Step 2: Add sausage and cook until browned, about 5 minutes
- Step 3: Add chicken and cook until browned, about 5 minutes
- Step 4: Add onions, celery, and bell pepper and cook until vegetables are tender, about 5 minutes
- Step 5: Add garlic, thyme, paprika, cayenne pepper, salt, and black pepper and cook for 1 minute
- Step 6: Add rice and cook for 1-2 minutes, stirring constantly
- Step 7: Add chicken broth and bring to a boil
- Step 8: Reduce heat to low, cover, and simmer for 25-30 minutes or until rice is tender and liquid is absorbed
