Description
A traditional Indian rice pudding dessert flavored with cardamom and nuts
Ingredients
- 0.5 teaspoon cardamom
- 0.25 cup butter
- 0.25 cup pistachios
- 0.25 cup almonds
- 0.25 teaspoon cinnamon
- 0.25 teaspoon nutmeg
- 1 cup basmati rice
- 0.25 cup sugar
- 4 cups milk
Instructions
- Step 1: Rinse the rice and soak it in water for 30 minutes. Drain and set aside.
- Step 2: In a large saucepan, combine the milk, sugar, cardamom, cinnamon, and nutmeg. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk starts to boil.
- Step 3: Add the soaked rice to the milk mixture and stir well. Reduce the heat to low and simmer, covered, for 18-20 minutes or until the rice is cooked and the mixture has thickened.
- Step 4: Stir in the chopped almonds and pistachios. Cook for an additional 2-3 minutes.
- Step 5: Remove the saucepan from the heat and stir in the unsalted butter until melted.
- Step 6: Let the Kheer cool to room temperature, then refrigerate until chilled.
