Ingredients
- 1 cup cheddar cheese
- 0.5 cup scallions
- 1 large onion
- Salt and pepper
- 2 cloves garlic
- 2 large flour tortillas
- 0.5 cup cilantro
- 1 cup kimchi
- 1 tablespoon vegetable oil
Instructions
- Step 1: Heat the oil in a large skillet over medium-high heat.
- Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 3: Add the minced garlic and cook for 1 minute, until fragrant.
- Step 4: Add the chopped kimchi and cook for 2-3 minutes, until slightly caramelized.
- Step 5: In a large bowl, combine the cooked kimchi mixture, shredded cheese, chopped cilantro, and chopped scallions.
- Step 6: Place one tortilla in the skillet and sprinkle half of the kimchi-cheese mixture onto half of the tortilla.
- Step 7: Fold the tortilla in half to enclose the filling. Cook for 2-3 minutes, until the tortilla is crispy and the cheese is melted.
- Step 8: Flip the quesadilla and cook for an additional 2-3 minutes, until the other side is also crispy and the cheese is melted.
- Step 9: Repeat with the remaining ingredients to make the second quesadilla.
- Step 10: Cut into wedges and serve hot.
