Ingredients

  • 1 teaspoon soy sauce
  • 1 tablespoon vegetable oil
  • 0.5 cup Spam
  • Salt and pepper
  • 0.5 cup kimchi
  • 2 cups rice
  • 2 cloves garlic
  • 1 small onion
  • 1 teaspoon Gochujang
  • 2 eggs

Instructions

  1. Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the diced Spam and cook until crispy, about 3-4 minutes. Remove from the skillet and set aside.
  3. Step 3: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 2-3 minutes.
  4. Step 4: Add the chopped kimchi to the skillet and stir to combine with the onion and garlic. Cook for an additional 2 minutes.
  5. Step 5: Push the kimchi mixture to one side of the skillet. Crack in the beaten eggs and scramble them until cooked through.
  6. Step 6: Mix the eggs with the kimchi mixture.
  7. Step 7: Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the kimchi and egg mixture for about 5 minutes, until everything is well combined and heated through.
  8. Step 8: Add the cooked Spam, soy sauce, and Gochujang to the skillet. Stir-fry for an additional 2-3 minutes, until everything is well coated with the sauce.
  9. Step 9: Season with salt and pepper to taste, then serve immediately.
