Description

Ingredients
- 1 teaspoon sesame oil
- Scallions
- 2 cloves garlic
- 1 small onion
- 2 teaspoons soy sauce
- 1 tablespoon vegetable oil
- 2 eggs
- 1 cup mixed vegetables
- Salt and pepper
- 1 teaspoon Gochujang
- 1 cup kimchi
- 2 cups rice
Instructions
- Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
- Step 3: Add the minced garlic and cook for an additional minute.
- Step 4: Add the mixed vegetables and cook until they are tender-crisp, about 2-3 minutes.
- Step 5: Add the chopped kimchi and cook for an additional 2 minutes, stirring frequently.
- Step 6: Push the vegetable mixture to one side of the pan.
- Step 7: Add a little more oil if necessary, then pour in the beaten eggs.
- Step 8: Scramble the eggs until they are cooked through, breaking them up into small pieces as they cook.
- Step 9: Mix the eggs with the vegetable mixture.
- Step 10: Add the cooked rice to the pan, breaking up any clumps with a spatula.
- Step 11: Stir-fry the rice with the vegetable mixture for about 5 minutes, until everything is well combined and heated through.
- Step 12: Add the soy sauce, Gochujang, and sesame oil to the pan, stirring to combine.
- Step 13: Cook for an additional 1-2 minutes, until the flavors are well combined.
- Step 14: Taste and adjust the seasoning as needed.
- Step 15: Transfer the kimchi fried rice to a serving platter or individual plates.
- Step 16: Garnish with chopped scallions and serve immediately.
