Ingredients

  • 1 teaspoon sesame oil
  • Scallions
  • 2 cloves garlic
  • 1 small onion
  • 2 teaspoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 eggs
  • 1 cup mixed vegetables
  • Salt and pepper
  • 1 teaspoon Gochujang
  • 1 cup kimchi
  • 2 cups rice

Instructions

  1. Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Step 3: Add the minced garlic and cook for an additional minute.
  4. Step 4: Add the mixed vegetables and cook until they are tender-crisp, about 2-3 minutes.
  5. Step 5: Add the chopped kimchi and cook for an additional 2 minutes, stirring frequently.
  6. Step 6: Push the vegetable mixture to one side of the pan.
  7. Step 7: Add a little more oil if necessary, then pour in the beaten eggs.
  8. Step 8: Scramble the eggs until they are cooked through, breaking them up into small pieces as they cook.
  9. Step 9: Mix the eggs with the vegetable mixture.
  10. Step 10: Add the cooked rice to the pan, breaking up any clumps with a spatula.

  12. Step 12: Add the soy sauce, Gochujang, and sesame oil to the pan, stirring to combine.
