Ingredients

  • 2 cloves garlic
  • 2 tablespoons brown sugar
  • 0.25 cup Gochujang
  • 0.25 cup sesame seeds
  • Kimchi slaw
  • 1 tablespoon ginger
  • 8 tortillas corn
  • 2 tablespoons soy sauce
  • 0.25 cup cilantro
  • 0.25 cup green onions
  • 1 pound beef short ribs

Instructions

  1. Step 1: In a large bowl, whisk together Gochujang, soy sauce, brown sugar, garlic, and ginger. Add the short ribs and marinate for at least 2 hours or overnight.
  2. Step 2: Preheat a grill or grill pan to medium-high heat. Remove the short ribs from the marinade, letting any excess liquid drip off. Grill the short ribs for 3-4 minutes per side, or until caramelized and cooked to desired level of doneness.
  3. Step 3: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  4. Step 4: Assemble the tacos by slicing the grilled short ribs into thin strips and placing them onto a warmed tortilla. Top with kimchi slaw, cilantro, green onions, sesame seeds, and crispy garlic.
