Description
A fusion twist on traditional tacos, featuring marinated beef short ribs, kimchi slaw, and cilantro in a crispy taco shell.
Ingredients
- 2 cloves garlic
- 2 tablespoons brown sugar
- 0.25 cup Gochujang
- 0.25 cup sesame seeds
- Kimchi slaw
- 1 tablespoon ginger
- 8 tortillas corn
- 2 tablespoons soy sauce
- 0.25 cup cilantro
- 0.25 cup green onions
- 1 pound beef short ribs
Instructions
- Step 1: In a large bowl, whisk together Gochujang, soy sauce, brown sugar, garlic, and ginger. Add the short ribs and marinate for at least 2 hours or overnight.
- Step 2: Preheat a grill or grill pan to medium-high heat. Remove the short ribs from the marinade, letting any excess liquid drip off. Grill the short ribs for 3-4 minutes per side, or until caramelized and cooked to desired level of doneness.
- Step 3: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 4: Assemble the tacos by slicing the grilled short ribs into thin strips and placing them onto a warmed tortilla. Top with kimchi slaw, cilantro, green onions, sesame seeds, and crispy garlic.
- Step 5: Serve immediately and enjoy!
