Ingredients

  • 0.25 cup olive oil
  • 0.25 cup red onion
  • 1 large cucumber
  • 1 teaspoon thyme
  • 0.5 pounds lamb shoulder
  • 2 cloves garlic
  • 2 tablespoons dill
  • 0.5 teaspoon salt
  • 1 tablespoon dried oregano
  • 2 tablespoons lemon juice
  • 1 cup Greek yogurt
  • 0.25 cup parsley
  • 4 breads pita
  • 0.25 teaspoon black pepper

Instructions

  1. Step 1: In a large bowl, whisk together olive oil, garlic, oregano, thyme, salt, and pepper. Add the sliced lamb and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. Step 2: Preheat a grill or grill pan to medium-high heat. Remove the lamb from the marinade, letting any excess liquid drip off. Grill the lamb for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the lamb to a cutting board and let rest for 5 minutes before slicing into thin strips.
  3. Step 3: In a medium bowl, combine the grated cucumber, yogurt, lemon juice, salt, and pepper. Stir to combine.
