Description

Ingredients
- 0.25 cup olive oil
- 0.25 cup red onion
- 1 large cucumber
- 1 teaspoon thyme
- 0.5 pounds lamb shoulder
- 2 cloves garlic
- 2 tablespoons dill
- 0.5 teaspoon salt
- 1 tablespoon dried oregano
- 2 tablespoons lemon juice
- 1 cup Greek yogurt
- 0.25 cup parsley
- 4 breads pita
- 0.25 teaspoon black pepper
Instructions
- Step 1: In a large bowl, whisk together olive oil, garlic, oregano, thyme, salt, and pepper. Add the sliced lamb and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Step 2: Preheat a grill or grill pan to medium-high heat. Remove the lamb from the marinade, letting any excess liquid drip off. Grill the lamb for 3-4 minutes per side, or until cooked to your desired level of doneness. Transfer the lamb to a cutting board and let rest for 5 minutes before slicing into thin strips.
- Step 3: In a medium bowl, combine the grated cucumber, yogurt, lemon juice, salt, and pepper. Stir to combine.
- Step 4: Warm the pita breads by wrapping them in foil and heating them in the oven for 5 minutes, or by grilling them for 30 seconds on each side.
- Step 5: Assemble the gyros by spreading a dollop of tzatziki sauce on each pita, followed by a few slices of lamb, some chopped onion, parsley, and dill.
