Description

Tender chicken breasts pounded thin, dredged in flour, sautéed in butter, and finished with a tangy lemon-caper sauce.

Ingredients

  • 4 chicken breasts
  • 0.25 cup chicken broth
  • 2 tbsp butter
  • 2 tbsp capers
  • 1 cup all-purpose flour
  • 2 lemons
  • 1 tsp black pepper
  • 0.25 cup white wine
  • parsley
  • 2 tsp salt
  • 2 cloves garlic

Instructions

  1. Step 1: Season the chicken with salt and pepper.
  2. Step 2: Dredge the chicken in flour, shaking off excess.
  3. Step 3: Heat 1 tbsp of butter in a large skillet over medium-high heat.
  4. Step 4: Sear the chicken for 2-3 minutes per side, or until cooked through.
  5. Step 5: Transfer the chicken to a plate and cover with foil to keep warm.
  6. Step 6: In the same skillet, add the remaining 1 tbsp of butter.
  7. Step 7: Add the garlic and cook for 1 minute, until fragrant.
  8. Step 8: Add the lemon juice, white wine, and chicken broth.
  9. Step 9: Scrape up any browned bits from the bottom of the pan.
  10. Step 10: Bring the sauce to a simmer and cook until reduced by half.
  11. Step 11: Stir in the capers and cook for an additional minute.
  12. Step 12: Serve the chicken with the lemon-caper sauce spooned over the top.
  13. Step 13: Garnish with chopped parsley.
