Description
Tender chicken breasts pounded thin, dredged in flour, sautéed in butter, and finished with a tangy lemon-caper sauce.
Ingredients
- 4 chicken breasts
- 0.25 cup chicken broth
- 2 tbsp butter
- 2 tbsp capers
- 1 cup all-purpose flour
- 2 lemons
- 1 tsp black pepper
- 0.25 cup white wine
- parsley
- 2 tsp salt
- 2 cloves garlic
Instructions
- Step 1: Season the chicken with salt and pepper.
- Step 2: Dredge the chicken in flour, shaking off excess.
- Step 3: Heat 1 tbsp of butter in a large skillet over medium-high heat.
- Step 4: Sear the chicken for 2-3 minutes per side, or until cooked through.
- Step 5: Transfer the chicken to a plate and cover with foil to keep warm.
- Step 6: In the same skillet, add the remaining 1 tbsp of butter.
- Step 7: Add the garlic and cook for 1 minute, until fragrant.
- Step 8: Add the lemon juice, white wine, and chicken broth.
- Step 9: Scrape up any browned bits from the bottom of the pan.
- Step 10: Bring the sauce to a simmer and cook until reduced by half.
- Step 11: Stir in the capers and cook for an additional minute.
- Step 12: Serve the chicken with the lemon-caper sauce spooned over the top.
- Step 13: Garnish with chopped parsley.
