Description
Quick and flavorful Italian-inspired dish made with succulent shrimp, zesty lemon, and aromatic garlic
Ingredients
- 0.5 cup linguine
- 2 lemons
- Salt and pepper
- 12 shrimp
- 4 cloves garlic
- 0.25 cup butter
- 0.5 cup Parmesan cheese
- 2 tbsp olive oil
- 0.25 cup white wine
- 0.5 cup parsley
Instructions
- Step 1: Bring a large pot of salted water to a boil and cook linguine according to package instructions. Reserve 1 cup of pasta water before draining.
- Step 2: In a large skillet, heat olive oil over medium-high heat. Add garlic and sauté for 1-2 minutes until fragrant.
- Step 3: Add shrimp to the skillet and sauté for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
- Step 4: Reduce heat to medium and add white wine to the skillet. Scrape up any browned bits from the bottom of the pan and simmer for 2-3 minutes until wine is almost completely reduced.
- Step 5: Add butter to the skillet and stir until melted. Stir in lemon juice, parsley, salt, and pepper.
- Step 6: Add cooked linguine to the skillet, tossing to combine with the lemon butter sauce. If the sauce seems too thick, add a bit of the reserved pasta water.
- Step 7: Return shrimp to the skillet and toss to combine with the linguine and sauce.
- Step 8: Serve immediately, topped with Parmesan cheese and parsley.
