Ingredients
- 2 cups water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup dill
- 2 lemons
- 2 tablespoons olive oil
- 1 cup parsley
- 2 cloves garlic
- 1 small onion
- 1 cup quinoa
Instructions
- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is tender and fluffy.
- Step 3: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes or until translucent.
- Step 4: Add the minced garlic and cook for an additional 1 minute.
- Step 5: Stir in the chopped parsley, dill, lemon zest, salt, and pepper. Cook for 1-2 minutes or until the herbs are slightly wilted.
- Step 6: Fluff the cooked quinoa with a fork and stir in the herb mixture and lemon juice.
- Step 7: Transfer the quinoa to a serving dish and serve warm.
