A hearty, flavorful vegetarian meatloaf made with lentils, mushrooms, and a blend of aromatic spices.

Ingredients

  • 1 small onion
  • 2 cups water or vegetable broth
  • 1 cup breadcrumbs
  • 8 oz mushrooms
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 cup lentils
  • 0.25 teaspoon black pepper
  • 2 cloves garlic
  • 0.5 teaspoon salt
  • 0.25 cup ketchup
  • 0.25 cup cheddar cheese
  • 1 teaspoon oregano

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: In a medium saucepan, bring the lentils and water or broth to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender. Drain and set aside.
  3. Step 3: In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, for 5-7 minutes, or until the onion is softened.
  4. Step 4: Add the mushrooms to the skillet and cook, stirring occasionally, for 5-7 minutes, or until they release their moisture and start to brown.
  5. Step 5: In a large bowl, combine the cooked lentils, mushroom mixture, breadcrumbs, smoked paprika, oregano, salt, and pepper. Stir until well combined.
  6. Step 6: Transfer the mixture to a loaf pan or shape into a loaf shape on a baking sheet.
  7. Step 7: Spread the ketchup over the top of the loaf and sprinkle with grated cheese.
  8. Step 8: Bake for 35-40 minutes, or until the meatloaf is firm and the cheese is melted and golden brown.
