Description
A classic Italian seafood dish featuring fresh clams in a light and flavorful white wine sauce
Ingredients
- 2 tablespoons lemon juice
- 0.5 cup basil
- 0.25 cup white wine
- 0.5 cup parsley
- 1 teaspoon thyme
- Salt and pepper
- 12 oz linguine
- 2 tablespoons olive oil
- 0.25 cup clam juice
- 4 cloves garlic
- 2 pounds clams
Instructions
- Step 1: Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
- Step 3: Add the white wine and clam juice to the skillet, stirring to combine. Bring the mixture to a simmer and cook for 2-3 minutes until reduced slightly.
- Step 4: Stir in the parsley, basil, lemon juice, and thyme. Season with salt and pepper to taste.
- Step 5: Add the clams to the skillet, cover with a lid, and cook for 3-5 minutes until the clams open.
- Step 6: Add the cooked linguine to the skillet, tossing to combine with the clam sauce. If the sauce seems too thick, add a bit of the reserved pasta water.
- Step 7: Serve immediately, garnished with additional parsley if desired.
