Crispy tater tots smothered in a rich cheese sauce, crispy bacon, and scallions

Ingredients

  • 1 tsp paprika
  • 0.25 cup scallions
  • 2 bags tater tots
  • 6 slices bacon
  • Salt and pepper
  • 0.5 cup sour cream
  • 0.5 cup Monterey Jack cheese
  • 1 cup cheddar cheese
  • 0.5 tsp garlic powder

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Spread tater tots on a baking sheet and bake for 20-25 minutes, or until golden brown.
  3. Step 3: While tater tots are baking, cook the bacon slices in a pan over medium heat until crispy.
  4. Step 4: In a saucepan, combine cheddar and Monterey Jack cheese. Heat over low heat, stirring constantly, until the cheese is melted and smooth.
  5. Step 5: Add sour cream, paprika, garlic powder, salt, and pepper to the cheese sauce. Stir until well combined.
  6. Step 6: Once tater tots are done, remove from oven and top with the cheese sauce, crumbled bacon, and chopped scallions.
  7. Step 7: Return to oven and bake for an additional 5-7 minutes, or until the cheese is bubbly and golden brown.
