Description
A hearty breakfast burrito filled with scrambled eggs, chorizo, black beans, and cheese.
Ingredients
- 6 large eggs
- 2 tablespoons vegetable oil
- 1 can black beans
- 1 cup hash browns
- 0.25 cup cilantro
- 6 large flour tortillas
- 1 cup Monterey Jack cheese
- 1 pound Mexican chorizo
- Salt and pepper
Instructions
- Step 1: In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the chorizo and cook, breaking it up with a spoon, until browned, about 5 minutes.
- Step 2: Transfer the chorizo to a plate and set aside. In the same skillet, add the remaining 1 tablespoon of oil. Pour in the eggs and scramble until cooked through, about 3-4 minutes.
- Step 3: Add the hash browns to the skillet and cook until golden brown, about 5 minutes.
- Step 4: Add the black beans, cooked chorizo, and scrambled eggs to the skillet. Stir to combine and cook for 1 minute.
- Step 5: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble the burritos by spooning the egg and chorizo mixture onto the center of a tortilla, followed by a sprinkle of cheese and a sprinkle of cilantro. Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the burrito up tightly. Repeat with the remaining ingredients.
