Ingredients

  • 0.5 tsp salt
  • 1 can red kidney beans
  • 0.5 tsp cayenne pepper
  • 0.25 cup cilantro
  • Sour cream
  • 2 tbsp chili powder
  • 1 can diced tomatoes
  • 1 cup cheddar cheese
  • 3 cloves garlic
  • 0.5 cup vegetable oil
  • 1 tsp ground cumin
  • 2 lbs Russet potatoes
  • 1 large onion
  • 1 lb ground beef
  • 0.25 tsp black pepper

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C).
  2. Step 2: Line a baking sheet with parchment paper.
  3. Step 3: Toss the potatoes with 1/4 cup vegetable oil, salt, and pepper on the prepared baking sheet. Bake for 20-25 minutes or until golden brown.
  4. Step 4: In a large pot or Dutch oven, heat the remaining 1/4 cup vegetable oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes.
  5. Step 5: Add the garlic, chili powder, cumin, cayenne pepper, salt, and pepper to the pot. Cook for 1 minute, stirring constantly.
  6. Step 6: Add the ground beef to the pot, breaking it up with a spoon as it cooks, until browned, about 5-7 minutes.
  7. Step 7: Stir in the diced tomatoes and red kidney beans. Bring the mixture to a simmer and cook for 10-15 minutes or until the flavors have melded together.
  8. Step 8: Remove the fries from the oven and top with the chili mixture, shredded cheese, and chopped cilantro.
  9. Step 9: Return the fries to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
