Description
A hearty, cheesy, and spicy twist on classic fries
Ingredients
- 0.5 tsp salt
- 1 can red kidney beans
- 0.5 tsp cayenne pepper
- 0.25 cup cilantro
- Sour cream
- 2 tbsp chili powder
- 1 can diced tomatoes
- 1 cup cheddar cheese
- 3 cloves garlic
- 0.5 cup vegetable oil
- 1 tsp ground cumin
- 2 lbs Russet potatoes
- 1 large onion
- 1 lb ground beef
- 0.25 tsp black pepper
Instructions
- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Line a baking sheet with parchment paper.
- Step 3: Toss the potatoes with 1/4 cup vegetable oil, salt, and pepper on the prepared baking sheet. Bake for 20-25 minutes or until golden brown.
- Step 4: In a large pot or Dutch oven, heat the remaining 1/4 cup vegetable oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes.
- Step 5: Add the garlic, chili powder, cumin, cayenne pepper, salt, and pepper to the pot. Cook for 1 minute, stirring constantly.
- Step 6: Add the ground beef to the pot, breaking it up with a spoon as it cooks, until browned, about 5-7 minutes.
- Step 7: Stir in the diced tomatoes and red kidney beans. Bring the mixture to a simmer and cook for 10-15 minutes or until the flavors have melded together.
- Step 8: Remove the fries from the oven and top with the chili mixture, shredded cheese, and chopped cilantro.
- Step 9: Return the fries to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
