Description

A classic nacho dish loaded with seasoned ground beef, refried beans, cheese, and toppings

Ingredients

  • 1 lb ground beef
  • 1 can diced tomatoes with green chilies
  • 0.5 tsp paprika
  • 0.5 cup Monterey Jack cheese
  • Salt and pepper
  • 0.25 cup cilantro
  • 0.25 cup red onion
  • 1 cup cheddar cheese
  • 1 tsp cumin
  • 0.5 cup sour cream
  • 0.5 cup refried beans
  • 0.25 tsp cayenne pepper
  • 12 corn tortilla chips

Instructions

  1. Step 1: Preheat oven to 350°F (180°C)
  2. Step 2: Cook ground beef in a large skillet over medium-high heat, breaking it up with a spoon as it cooks, until browned, about 5-7 minutes
  3. Step 3: Stir in cumin, paprika, and cayenne pepper; cook 1 minute
  4. Step 4: Stir in diced tomatoes with green chilies and cook 2-3 minutes
  5. Step 5: Spread refried beans on the bottom of a 9x13 inch baking dish
  6. Step 6: Arrange half of the tortilla chips on top of the beans
  7. Step 7: Spoon the ground beef mixture over the tortilla chips
  8. Step 8: Sprinkle with half of the cheddar and Monterey Jack cheese
  9. Step 9: Repeat the layers, starting with the tortilla chips, then the remaining ground beef mixture, and finally the remaining cheese
  10. Step 10: Bake for 20-25 minutes, or until the cheese is melted and bubbly
  11. Step 11: Top with chopped red onion, cilantro, and a dollop of sour cream
