Description
Crispy potato skins filled with melted cheese, savory bacon, and scallions
Ingredients
- 0.25 cup scallions
- 0.5 teaspoon paprika
- Salt and pepper
- 0.25 cup Monterey Jack cheese
- 4 large baking potatoes
- 2 tablespoons olive oil
- 0.5 cup cheddar cheese
- 6 slices bacon
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: Scrub the potatoes clean and dry them with a paper towel. Poke some holes in each potato with a fork.
- Step 3: Rub the potatoes with olive oil and sprinkle with paprika. Bake for 45-60 minutes, or until tender.
- Step 4: While the potatoes are baking, cook the bacon in a pan until crispy. Remove from heat and set aside.
- Step 5: Once the potatoes are done, let them cool for a few minutes. Slice them in half lengthwise and scoop out most of the flesh, leaving a thin layer to hold the skin together.
- Step 6: In a bowl, mix together the shredded cheese, crumbled bacon, and chopped scallions.
- Step 7: Stuff each potato skin with the cheese-bacon-scallion mixture and place them on a baking sheet.
- Step 8: Return the stuffed potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
