Description

Crispy tater tots loaded with melted cheese, crispy bacon, and scallions

Ingredients

  • Vegetable oil
  • 0.25 teaspoon black pepper
  • 6 slices bacon
  • 0.25 cup scallions
  • 2 pounds Russet potatoes
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • 0.5 teaspoon paprika
  • 0.5 cup cheddar cheese
  • 1 cup all-purpose flour
  • 1 egg
  • 0.25 cup Monterey Jack cheese

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Grate the potatoes and soak them in cold water for 30 minutes. Drain and squeeze out excess water.
  3. Step 3: In a bowl, mix together the grated potatoes, flour, egg, paprika, garlic powder, salt, and pepper.
  4. Step 4: Divide the potato mixture into 6 equal parts and shape each part into a cylinder.
  5. Step 5: Dip each cylinder into the beaten egg and then roll in panko breadcrumbs to coat.
  6. Step 6: Heat about 2-3 inches of vegetable oil in a deep frying pan to 350°F (180°C). Fry the tater tots until golden brown, about 3-4 minutes per side. Drain on paper towels.
  7. Step 7: While the tater tots are frying, cook the diced bacon in a pan until crispy. Drain on paper towels.
  8. Step 8: Once the tater tots are done, place them on a baking sheet lined with parchment paper. Sprinkle shredded cheese on top of each tater tot and bake in the oven for 5-7 minutes, or until the cheese is melted and bubbly.
  9. Step 9: Remove from the oven and top each tater tot with crispy bacon, chopped scallions, and a dollop of sour cream (if desired).
