A decadent, cheesy, and savory twist on the classic baked potato

Ingredients

  • 0.25 cup green onions
  • 4 large baking potatoes
  • 0.5 cup bacon
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 2 cloves garlic
  • 1 cup cheddar cheese
  • 0.25 cup butter
  • 0.5 cup sour cream
  • 0.5 cup Monterey Jack cheese

Instructions

  1. Step 1: Preheat oven to 400°F (200°C)
  2. Step 2: Scrub potatoes clean and poke with a fork several times
  3. Step 3: Bake potatoes for 45-60 minutes, or until tender
  4. Step 4: Remove potatoes from oven and let cool for 10 minutes
  5. Step 5: Slice potatoes in half lengthwise and scoop out most of the flesh
  6. Step 6: In a bowl, mash potato flesh with butter, cheddar cheese, Monterey Jack cheese, sour cream, bacon, green onions, garlic, salt, and pepper
  7. Step 7: Stuff each potato shell with the mashed potato mixture and top with additional cheese
  8. Step 8: Bake stuffed potatoes for an additional 15-20 minutes, or until cheese is melted and bubbly
