Description
A decadent, cheesy, and savory twist on the classic baked potato
Ingredients
- 0.25 cup green onions
- 4 large baking potatoes
- 0.5 cup bacon
- 0.5 tsp black pepper
- 1 tsp salt
- 2 cloves garlic
- 1 cup cheddar cheese
- 0.25 cup butter
- 0.5 cup sour cream
- 0.5 cup Monterey Jack cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C)
- Step 2: Scrub potatoes clean and poke with a fork several times
- Step 3: Bake potatoes for 45-60 minutes, or until tender
- Step 4: Remove potatoes from oven and let cool for 10 minutes
- Step 5: Slice potatoes in half lengthwise and scoop out most of the flesh
- Step 6: In a bowl, mash potato flesh with butter, cheddar cheese, Monterey Jack cheese, sour cream, bacon, green onions, garlic, salt, and pepper
- Step 7: Stuff each potato shell with the mashed potato mixture and top with additional cheese
- Step 8: Bake stuffed potatoes for an additional 15-20 minutes, or until cheese is melted and bubbly
