Ingredients

  • 0.5 teaspoon salt
  • 2 cloves garlic
  • 8 ounces Monterey Jack cheese
  • 1 teaspoon smoked paprika
  • cilantro
  • 1 cup brown rice
  • 4 large flour tortillas
  • 1 cup red onion
  • 1 cup black beans
  • 1 tablespoon olive oil
  • 1 cup zucchini
  • 0.25 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 cup corn kernels
  • 1 cup bell peppers

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large bowl, toss together bell peppers, zucchini, red onion, and garlic. Drizzle with olive oil and sprinkle with cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
  3. Step 3: In a large pan, warm the black beans over medium heat. Stir in corn kernels and cook until heated through.
  4. Step 4: In a large bowl, combine cooked rice, roasted vegetables, and black bean mixture. Stir in shredded cheese until melted and well combined.
  5. Step 5: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  6. Step 6: Assemble burritos by spooning the rice and vegetable mixture onto the center of a tortilla and folding in the sides and rolling up tightly. Repeat with remaining ingredients.
