Description
A flavorful and nutritious burrito packed with roasted vegetables, beans, and cheese
Ingredients
- 0.5 teaspoon salt
- 2 cloves garlic
- 8 ounces Monterey Jack cheese
- 1 teaspoon smoked paprika
- cilantro
- 1 cup brown rice
- 4 large flour tortillas
- 1 cup red onion
- 1 cup black beans
- 1 tablespoon olive oil
- 1 cup zucchini
- 0.25 teaspoon black pepper
- 1 teaspoon cumin
- 1 cup corn kernels
- 1 cup bell peppers
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a large bowl, toss together bell peppers, zucchini, red onion, and garlic. Drizzle with olive oil and sprinkle with cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
- Step 3: In a large pan, warm the black beans over medium heat. Stir in corn kernels and cook until heated through.
- Step 4: In a large bowl, combine cooked rice, roasted vegetables, and black bean mixture. Stir in shredded cheese until melted and well combined.
- Step 5: Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble burritos by spooning the rice and vegetable mixture onto the center of a tortilla and folding in the sides and rolling up tightly. Repeat with remaining ingredients.
- Step 7: Serve immediately, garnished with chopped cilantro.
