Description
A fluffy omelette packed with sautéed vegetables and gooey cheese
Ingredients
- 0.25 cup cheddar cheese
- 2 cloves garlic
- 0.5 cup zucchini
- Salt and pepper
- 2 eggs
- 1 tablespoon butter
- 0.5 cup onions
- 0.5 cup mushrooms
- 0.5 cup bell peppers
Instructions
- Step 1: In a small bowl, whisk together eggs and a pinch of salt
- Step 2: Heat butter in a medium non-stick skillet over medium heat
- Step 3: Add diced bell peppers, onions, mushrooms, and zucchini. Cook until tender, about 5 minutes
- Step 4: Add garlic and cook for an additional minute
- Step 5: Pour whisked eggs over the vegetables and cook until the edges start to set
- Step 6: Sprinkle shredded cheese over half of the omelette
- Step 7: Use a spatula to gently fold the other half of the omelette over the cheese
- Step 8: Cook for an additional 2-3 minutes, until the cheese is melted and the eggs are cooked through
