Description

Ingredients

  • 0.25 cup cheddar cheese
  • 2 cloves garlic
  • 0.5 cup zucchini
  • Salt and pepper
  • 2 eggs
  • 1 tablespoon butter
  • 0.5 cup onions
  • 0.5 cup mushrooms
  • 0.5 cup bell peppers

Instructions

  1. Step 1: In a small bowl, whisk together eggs and a pinch of salt
  2. Step 2: Heat butter in a medium non-stick skillet over medium heat
  3. Step 3: Add diced bell peppers, onions, mushrooms, and zucchini. Cook until tender, about 5 minutes
  4. Step 4: Add garlic and cook for an additional minute
  5. Step 5: Pour whisked eggs over the vegetables and cook until the edges start to set
