Description
A spicy Sichuan hot pot dish
Ingredients
- 2 cloves garlic
- 2 cups chicken broth
- 1 lb beef slices
- 0.25 cup Sichuan red chilies
- 0.25 cup Sichuan hot chili oil
- 2 tablespoons Shaoxing wine
- 0.25 cup peanuts
- 2 tablespoons Sichuan peppercorns
- 1 tablespoon ginger
- 2 tablespoons soy sauce
- 1 cup water
- 0.5 cup vegetable oil
- 1 tablespoon cornstarch
- 0.25 cup scallions
Instructions
- Step 1: Heat oil in a wok over high heat.
- Step 2: Add beef and cook until browned, 2-3 minutes.
- Step 3: Add garlic, ginger, and Sichuan peppercorns, stir-fry for 30 seconds.
- Step 4: Add Sichuan hot chili oil, soy sauce, and Shaoxing wine, stir-fry for 1 minute.
- Step 5: Mix cornstarch with a little water, add to the wok, stir-fry for 1 minute.
- Step 6: Add chicken broth, water, scallions, peanuts, and dried Sichuan red chilies, bring to a boil.
- Step 7: Reduce heat to medium-low, simmer for 5 minutes.
