Description

Ingredients
- 1 cup cucumber
- 1 cup mixed greens
- 0.5 cup red onion
- 1 lb chicken breast
- 1 tsp smoked paprika
- 0.5 cup mango chutney
- 1 cup carrots
- 1 tsp cumin
- 2 tbsp olive oil
- 2 large flour tortillas
- Salt and pepper
- 0.25 cup cilantro
Instructions
- Step 1: Preheat grill or grill pan to medium-high heat.
- Step 2: In a small bowl, whisk together cumin, smoked paprika, salt, and pepper.
- Step 3: Brush the spice mixture evenly onto both sides of the chicken strips.
- Step 4: Grill the chicken for 5-6 minutes per side, or until cooked through.
- Step 5: Meanwhile, warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Spread 1/4 cup of mango chutney onto each tortilla, leaving a 1-inch border around the edges.
- Step 7: Assemble the wraps by placing the cooked chicken, mixed greens, shredded carrots, sliced cucumber, and sliced red onion on top of the mango chutney.
- Step 8: Drizzle with olive oil and sprinkle with chopped cilantro.
