Ingredients

  • 1 cup cucumber
  • 1 cup mixed greens
  • 0.5 cup red onion
  • 1 lb chicken breast
  • 1 tsp smoked paprika
  • 0.5 cup mango chutney
  • 1 cup carrots
  • 1 tsp cumin
  • 2 tbsp olive oil
  • 2 large flour tortillas
  • Salt and pepper
  • 0.25 cup cilantro

Instructions

  1. Step 1: Preheat grill or grill pan to medium-high heat.
  2. Step 2: In a small bowl, whisk together cumin, smoked paprika, salt, and pepper.
  3. Step 3: Brush the spice mixture evenly onto both sides of the chicken strips.
  4. Step 4: Grill the chicken for 5-6 minutes per side, or until cooked through.
  5. Step 5: Meanwhile, warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
